  4. 4. Heat the sunflower oil in a pan.
  5. 5. Sear the fillet on all sides.
  6. 6. Cook the meat for a total of 10 minutes.
  7. 7. Remove the fillet from the pan.
  8. 8. Let the meat cool down completely.
  9. 9. Let the puff pastry sheets thaw at room temperature.
  10. 10. Set aside a small piece of pastry for decoration.
  11. 11. Stack the remaining pastry sheets.
  12. 12. Roll out the pastry into a large rectangle.
  13. 13. The rectangle should measure 40 x 50 centimeters.
  14. 14. Melt the butter over very low heat in a pot.
  15. 15. Lightly sauté the porcini powder in the butter.
  16. 16. Sauté the mushroom powder for 1 to 2 minutes.

  23. 23. Brush the pastry with the beaten egg white.
  24. 24. Pull the long pastry end over the fillet.
  25. 25. Roll out the remaining pastry sheet.
  26. 26. Cut out decorations from the pastry or cut them out.
  27. 27. Decorate the surface of the fillet with the pastry pieces.
  28. 28. Brush the surface with a little egg yolk.
  29. 29. Prick the pastry several times with a fork.
  30. 30. Rinse a baking sheet with cold water.

  32. 32. Preheat the oven to 180 degrees convection.
