🍽️ Crispy Beef Fillet in Puff Pastry

Ingredients
- 1.5 kg beef fillet
- 1 tbsp porcini powder
- 1 tbsp butter
- 2 tbsp sunflower oil
- 2 pack puff pastry (frozen)
- salt
- pepper (from the mill)
- 1 egg white
- 2 egg yolks
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the fillet completely dry with a kitchen towel.
- 3. Season the meat generously with salt and pepper.
- 4. Heat the sunflower oil in a pan.
- 5. Sear the fillet on all sides.
- 6. Cook the meat for a total of 10 minutes.
- 7. Remove the fillet from the pan.
- 8. Let the meat cool down completely.
- 9. Let the puff pastry sheets thaw at room temperature.
- 10. Set aside a small piece of pastry for decoration.
- 11. Stack the remaining pastry sheets.
- 12. Roll out the pastry into a large rectangle.
- 13. The rectangle should measure 40 x 50 centimeters.
- 14. Melt the butter over very low heat in a pot.
- 15. Lightly sauté the porcini powder in the butter.
- 16. Sauté the mushroom powder for 1 to 2 minutes.
- 17. Place the cooled fillet on the rolled-out pastry.
- 18. Brush the fillet all around with the mushroom butter.
- 19. Season the fillet again generously with pepper.
- 20. Fold the narrow pastry edge over the fillet.
- 21. Fold the two wide sides of the pastry over the meat.
- 22. Whisk the egg white in a small bowl.
- 23. Brush the pastry with the beaten egg white.
- 24. Pull the long pastry end over the fillet.
- 25. Roll out the remaining pastry sheet.
- 26. Cut out decorations from the pastry or cut them out.
- 27. Decorate the surface of the fillet with the pastry pieces.
- 28. Brush the surface with a little egg yolk.
- 29. Prick the pastry several times with a fork.
- 30. Rinse a baking sheet with cold water.
- 31. Place the pastry on the wiped baking sheet.
- 32. Preheat the oven to 180 degrees convection.
- 33. Bake the fillet for about 35 minutes.
- 34. Turn off the oven after baking.
- 35. Let the fillet rest in the oven for another 10 minutes.
