🍽️ Juicy Beef Fillet with Herb Crust

Ingredients
- 800 g beef fillet trimmed (center piece)
- salt
- pepper (from the mill)
- 2 tbsp vegetable oil
- 40 g chopped almond kernels
- 80 g mixed herbs (e.g. chives, parsley and cilantro)
Instructions
- 1. Preheat the oven to 120 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the meat briefly and pat it dry with kitchen paper.
- 3. Season the meat all over with salt and pepper.
- 4. Sear the meat in hot oil on all sides until brown.
- 5. Remove the meat from the pan and place it on a wire rack.
- 6. Place a drip pan under the rack to catch any rising juices.
- 7. Put the meat in the oven and bake it for about 40 to 50 minutes.
- 8. The cooking time depends on the thickness of the meat.
- 9. The meat is done when the core temperature reaches between 55 and 60 degrees Celsius (pink center).
- 10. Roast the almonds in a pan without fat until golden brown.
- 11. Remove the almonds from the pan and let them cool down.
- 12. Rinse the herbs briefly and pat them dry.
- 13. Pluck the leaves from the stems and chop them finely.
- 14. Cut the chives into fine rings.
- 15. Mix the chopped herbs and chives with the cooled almonds.
- 16. Spread the herb-almond mixture on a flat plate.
- 17. Take the meat out of the oven.
- 18. Roll the meat in the herb mixture until it is completely covered.
- 19. Slice the meat.
- 20. Serve the slices immediately.
