  1. 1. Preheat the oven to 120 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Rinse the meat briefly and pat it dry with kitchen paper.
  3. 3. Season the meat all over with salt and pepper.
  4. 4. Sear the meat in hot oil on all sides until brown.
  5. 5. Remove the meat from the pan and place it on a wire rack.
  6. 6. Place a drip pan under the rack to catch any rising juices.
  7. 7. Put the meat in the oven and bake it for about 40 to 50 minutes.
  8. 8. The cooking time depends on the thickness of the meat.
  9. 9. The meat is done when the core temperature reaches between 55 and 60 degrees Celsius (pink center).
  10. 10. Roast the almonds in a pan without fat until golden brown.
  11. 11. Remove the almonds from the pan and let them cool down.
  12. 12. Rinse the herbs briefly and pat them dry.
  13. 13. Pluck the leaves from the stems and chop them finely.
  14. 14. Cut the chives into fine rings.
  15. 15. Mix the chopped herbs and chives with the cooled almonds.
  16. 16. Spread the herb-almond mixture on a flat plate.
  17. 17. Take the meat out of the oven.
  18. 18. Roll the meat in the herb mixture until it is completely covered.
  19. 19. Slice the meat.
  20. 20. Serve the slices immediately.
