🍽️ Spicy Beef Stew with Orange and Ginger

Ingredients
- 1 kg beef goulash
- 1 piece ginger (6 cm)
- 1 orange (segmented)
- 2 garlic cloves
- 3 tbsp vegetable oil
- 2 cinnamon sticks
- 4 cardamom pods
- 1 tbsp coriander seeds (crushed)
- 500 ml beef stock
- salt
- pepper (freshly ground)
- 0.5 tsp chili powder
- 1 tbsp orange zest
Instructions
- 1. Heat the oil in a large casserole dish over high heat.
- 2. Sear the meat in batches until browned on all sides.
- 3. Peel the garlic and chop it finely.
- 4. Peel the ginger and slice it into thin rounds.
- 5. Add the ginger to the meat and fry it briefly over medium heat.
- 6. Add the coriander and sweat it briefly.
- 7. Deglaze the pot with the stock.
- 8. Add the orange segments, cinnamon, and cardamom to the pot.
- 9. Simmer the stew covered for 1 to 1.5 hours.
- 10. Stir the stew occasionally during the cooking time.
- 11. Add more liquid if the stew becomes too dry.
- 12. Add the chili towards the end of the cooking time.
- 13. Season the stew with salt and pepper to taste.
- 14. Sprinkle the finished dish with orange zest and serve.
