  2. 2. Sear the meat in batches until browned on all sides.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Peel the ginger and slice it into thin rounds.
  5. 5. Add the ginger to the meat and fry it briefly over medium heat.
  6. 6. Add the coriander and sweat it briefly.
  7. 7. Deglaze the pot with the stock.
  8. 8. Add the orange segments, cinnamon, and cardamom to the pot.
  9. 9. Simmer the stew covered for 1 to 1.5 hours.
  10. 10. Stir the stew occasionally during the cooking time.
  11. 11. Add more liquid if the stew becomes too dry.
  12. 12. Add the chili towards the end of the cooking time.
  13. 13. Season the stew with salt and pepper to taste.
  14. 14. Sprinkle the finished dish with orange zest and serve.
