  1. 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into bite-sized cubes.
  3. 3. Peel the potatoes and wash them thoroughly.
  4. 4. Cut the potatoes into small pieces.
  5. 5. Peel the onions and the garlic.
  6. 6. Dice the onions and garlic very finely.
  7. 7. Grind cumin, pepper, and coriander finely in a mortar.
  8. 8. Mix the ground spice blend with Garam Masala and cinnamon.
  9. 9. Heat ghee in a large pot.
  10. 10. Fry the meat in batches over high heat until browned on all sides.
  11. 11. Add the diced onions and garlic to the pot.
  12. 12. Sauté the vegetables until golden brown and soft.
  13. 13. Stir the prepared spice mixture into the meat and vegetable mixture.
  14. 14. Deglaze the mixture with the broth.
  15. 15. Add the potato pieces to the pot.
  16. 16. Season the soup with salt to your liking.
  17. 17. Place the lid on the pot.
  18. 18. Simmer the stew on low heat for about one and a half hours.
  19. 19. Stir the stew occasionally during the cooking time.
  20. 20. Add more broth if necessary to prevent the potatoes from drying out.
  21. 21. Remove the lid about twenty minutes before the end of the cooking time.
  22. 22. Let the sauce thicken slightly until it is creamy.
  23. 23. Taste the finished stew and adjust seasoning before serving.
