🍽️ Aromatic Beef Stew with Potatoes

Ingredients
- 800 g beef (e.g. shoulder)
- 600 g waxy potatoes
- 2 onions
- 1 clove garlic
- 0.5 tsp cumin seeds
- 0.5 tsp peppercorns
- 0.5 tsp coriander seeds
- 1 tsp garam masala
- 1 pinch cinnamon powder
- 2 tbsp ghee
- 500 ml beef broth
- salt
Instructions
- 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into bite-sized cubes.
- 3. Peel the potatoes and wash them thoroughly.
- 4. Cut the potatoes into small pieces.
- 5. Peel the onions and the garlic.
- 6. Dice the onions and garlic very finely.
- 7. Grind cumin, pepper, and coriander finely in a mortar.
- 8. Mix the ground spice blend with Garam Masala and cinnamon.
- 9. Heat ghee in a large pot.
- 10. Fry the meat in batches over high heat until browned on all sides.
- 11. Add the diced onions and garlic to the pot.
- 12. Sauté the vegetables until golden brown and soft.
- 13. Stir the prepared spice mixture into the meat and vegetable mixture.
- 14. Deglaze the mixture with the broth.
- 15. Add the potato pieces to the pot.
- 16. Season the soup with salt to your liking.
- 17. Place the lid on the pot.
- 18. Simmer the stew on low heat for about one and a half hours.
- 19. Stir the stew occasionally during the cooking time.
- 20. Add more broth if necessary to prevent the potatoes from drying out.
- 21. Remove the lid about twenty minutes before the end of the cooking time.
- 22. Let the sauce thicken slightly until it is creamy.
- 23. Taste the finished stew and adjust seasoning before serving.
