🍽️ Creamy Beef Curry with Pineapple and Walnuts

Ingredients
- 4 shallots
- 50 g walnuts
- 2 tbsp coconut flakes
- 600 g beef fillet
- 1 tbsp ghee (or clarified butter)
- 0.5 tsp ground turmeric
- 1 tsp yellow curry paste
- 200 ml vegetable broth
- 125 ml coconut milk
- 100 ml pineapple juice
- salt
- chili (for garnishing)
Instructions
- 1. Peel the shallots and dice them into very small cubes.
- 2. Mix the walnuts with the coconut flakes and grind the mixture finely.
- 3. Wash the meat, pat it dry with a kitchen towel, and cut it into bite-sized pieces.
- 4. Heat the ghee in a pot and sear the meat on all sides over high heat.
- 5. Add the diced shallots to the meat and sauté them briefly.
- 6. Add the ground nut-coconut mixture and sauté it briefly as well.
- 7. Sprinkle turmeric over it, add the curry paste, and deglaze everything with the broth.
- 8. Pour in the coconut milk and the juice, and stir everything well.
- 9. Let the curry simmer covered on low heat for 2 to 3 minutes until the meat is cooked through.
- 10. Season the curry to taste with salt at the end.
- 11. Serve the curry garnished with fresh chilies if desired.
