🍽️ Homemade Beef Broth

Ingredients
- 700 g marbled beef
- 2 marrow bones
- 1.5 l cold water
- 1 carrot
- 1 piece celery
- 1 parsley root
- 5 peppercorns
- 1 small stalk leek
- 2 bay leaves
- 1 sprig thyme
- 1 onion
- salt
- pepper
Instructions
- 1. Place the meat and marrow bones in a large pot and cover with cold water. Slowly bring to a boil, skimming off the foam that rises to the surface repeatedly.
- 2. Wash, trim, and peel the vegetables, chop them roughly, and add them to the broth along with the peppercorns. Halve the leek stalk, wash it, and tie it together with the bay leaves and thyme.
- 3. Peel the onion, halve it, and roast the cut sides on the hot stovetop or in a pan until golden brown. Add everything to the broth, season with salt, and simmer gently with the lid on for about 2 to 2.5 hours.
- 4. Remove the meat from the broth. Line a fine sieve with a clean kitchen towel, strain the broth through it, and season to taste again.
