🍽️ Juicy Beef Roast Wrapped in Bacon

Ingredients
- 1.2 kg beef roast (shoulder)
- 3 tbsp clarified butter
- salt
- pepper (coarsely ground)
- 300 g streaky bacon (thin slices)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the meat under cold water and pat it completely dry with kitchen paper.
- 3. Heat the ghee (clarified butter) in a large casserole dish or roasting pan.
- 4. Sear the meat on all sides for about 5 minutes until it forms a brown crust.
- 5. Remove the meat from the pot and rub it all over with salt and pepper.
- 6. Lay the bacon slices closely together over the entire meat so that it is completely covered.
- 7. Place the roast on a roasting rack and put it in the preheated oven.
- 8. Place a drip pan under the rack to catch any dripping fat.
- 9. Roast the meat in the oven for 1.5 hours.
- 10. Insert a meat thermometer into the thickest center of the meat during the cooking time.
- 11. Remove the roast from the oven as soon as the thermometer reads 70 degrees if you want it pink.
- 12. Remove the roast from the oven as soon as the thermometer reads 85 degrees if you want it well-done.
- 13. Let the roast rest briefly so that the meat juices can redistribute.
- 14. Slice the roast and serve it together with red cabbage.
