🍽️ Creamy Goose Rillettes

Ingredients
- Goose meat (Approx. 250 g cooked, fat or leaf lard)
- Goose fat (Approx. 250 g cooked, fat or leaf lard)
- 2 tart apples
- 1 tsp pickled green peppercorns
- 4 bay leaves
- 2 tbsp chopped marjoram leaves
- Salt
- Pepper (from the mill)
Instructions
- 1. Remove the skin and bones from the goose meat and cut it into very small cubes. Warm the fat (if necessary, chop the flomen coarsely first and melt it over medium heat in a pot). Pour the liquid fat through a sieve into a clean pot.
- 2. Peel the apples, cut them into eighths, remove the core, and dice them. Add the goose meat, peppercorns, apple cubes, and bay leaves to the fat. Simmer everything over very low heat for about 1 hour, then set aside to cool.
- 3. As soon as the fat starts to set, season the mixture with salt and pepper. Stir in the marjoram and mix well until a creamy, spreadable consistency forms. Fill the rillettes into jars or small molds and chill them until serving. Serve with peasant bread.
