🍽️ Creamy Duck Rillettes

Ingredients
- 600 g duck breast fillet (with fat layer)
- 200 g duck fat (or goose fat as a substitute)
- 0.1 l white wine
- 3 bay leaves
- 2 tbsp salt
- 1 tsp sugar
- pepper (white)
Instructions
- 1. Carefully separate the duck breasts from the fat layer.
- 2. Rub the meat evenly with salt, sugar, and pepper.
- 3. Tightly wrap the seasoned meat in plastic wrap.
- 4. Place the wrapped package in the refrigerator for 24 hours to let the flavors infuse.
- 5. Cut the fat rind into very small cubes.
- 6. Place the fat cubes in a pot and melt them slowly over low heat.
- 7. Add the rendered duck fat, wine, and bay leaves to the pot.
- 8. Remove the marinated meat from the plastic wrap.
- 9. Cut the meat into very thin strips, slicing lengthwise against the grain.
- 10. Add the meat strips to the fat mixture.
- 11. Simmer the meat in the fat mixture over low heat for about 2 hours until tender.
- 12. Transfer the hot mixture into a bowl or small ramekins.
- 13. Cover the containers and refrigerate until completely cooled and set.
