  1. 1. Peel the prawns, but leave the last piece of the tail on. Remove the head. Make a shallow cut along the back of the prawns. Remove the black vein. Rinse the prawns briefly. Pat them dry with a kitchen towel.
  2. 2. Wash the spring onions. Cut them into very fine strips. Wash the lime and dry it. Peel off the thin outer zest of the lime. Dice the zest finely. Squeeze the lime juice. Wash the mint and shake it dry. Chop the mint finely. Chop the lemongrass very finely. Peel the shallot and the garlic. Dice both very finely.
  3. 3. Heat the oil in a pan. Fry the prawns in it for 3 minutes. Remove the prawns from the pan. Stir in the shallot, garlic, lime zest, lemongrass, and curry paste. Let the mixture sizzle for a few seconds. Add the lime juice. Bring the sauce to a boil. Season with salt. Return the prawns to the pan. Let them simmer briefly in the sauce. Add the spring onions. Toss everything briefly. Serve the prawns garnished with lime slices and mint.
