  2. 2. Cut out the hard stem area of the tomato in a wedge shape.
  3. 3. Cut the tomato into four equal quarters.
  4. 4. Remove the inner pulp containing the seeds.
  5. 5. Dice the remaining tomato flesh into small cubes.
  6. 6. Place the ricotta, tomato paste, fresh herbs, and diced tomato into a small bowl.
  7. 7. Stir all ingredients in the bowl thoroughly until well combined.
  8. 8. Season the mixture to taste with salt and pepper.
  9. 9. Spread the ricotta tomato cream evenly over two slices of bread.
  10. 10. Place the two creamed slices on top of each other.
  11. 11. Place the third slice of bread on top as the final layer.
  12. 12. Cut the finished sandwich once diagonally into two halves.
  13. 13. Pack the sandwich halves securely for transport.
