  1. 1. Wash the spinach thoroughly and dry it well.
  2. 2. Cut the dry spinach into fine strips.
  3. 3. Grate the Parmesan finely.
  4. 4. Put the spinach, ricotta, grated Parmesan, flour, egg, salt, and pepper into a bowl.
  5. 5. Mix the ingredients quickly into a smooth dough.
  6. 6. Place the dough bowl in the refrigerator for a few minutes.
  7. 7. Wash the tomatoes and remove the hard stem areas.
  8. 8. Slice the tomatoes as thinly as possible.
  9. 9. Peel the onions and cut them into very fine rings.
  10. 10. Whisk vinegar, honey, salt, and pepper in a small bowl.
  11. 11. Stir three tablespoons of olive oil into the vinegar-honey mixture.
  12. 12. Wash the basilicum and shake it dry.
  13. 13. Pluck the basilicum leaves from the stems.
  14. 14. Layer tomato slices, onion rings, and basilicum leaves alternately into small towers on a plate.
  15. 15. Season each layer of the towers lightly with salt and pepper.
  16. 16. Drizzle the towers with some of the prepared salad dressing.
  17. 17. Let the towers rest at room temperature for about 15 minutes.
  18. 18. Heat the remaining olive oil in a heavy non-stick pan over medium heat.
  19. 19. Dip a tablespoon into water to wet it.
  20. 20. Scoop small portions of the ricotta mixture with the wet spoon.
  21. 21. Gently place the fritters into the hot oil.
  22. 22. Press the fritters slightly flat with the back of the spoon.
  23. 23. Fry the fritters for about two minutes until golden brown.
  24. 24. Turn the fritters and fry them for another one to two minutes.
  25. 25. Remove the finished fritters from the pan and place them on the plate.
  26. 26. Sprinkle the fritters with freshly ground pepper.
  27. 27. Add a little more grated Parmesan on top if desired.
