🍽️ Crispy Ricotta-Spinach Fritters with Tomato-Basilicum Towers

Ingredients
- 125 g fresh spinach leaves
- 40 g Parmesan
- 475 g ricotta
- 2 tbsp wheat wholemeal flour
- 1 egg (L)
- salt
- pepper
- 700 g red and yellow tomatoes
- 2 large red onions
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 0.5 bunch basil
- 4 tbsp olive oil
Instructions
- 1. Wash the spinach thoroughly and dry it well.
- 2. Cut the dry spinach into fine strips.
- 3. Grate the Parmesan finely.
- 4. Put the spinach, ricotta, grated Parmesan, flour, egg, salt, and pepper into a bowl.
- 5. Mix the ingredients quickly into a smooth dough.
- 6. Place the dough bowl in the refrigerator for a few minutes.
- 7. Wash the tomatoes and remove the hard stem areas.
- 8. Slice the tomatoes as thinly as possible.
- 9. Peel the onions and cut them into very fine rings.
- 10. Whisk vinegar, honey, salt, and pepper in a small bowl.
- 11. Stir three tablespoons of olive oil into the vinegar-honey mixture.
- 12. Wash the basilicum and shake it dry.
- 13. Pluck the basilicum leaves from the stems.
- 14. Layer tomato slices, onion rings, and basilicum leaves alternately into small towers on a plate.
- 15. Season each layer of the towers lightly with salt and pepper.
- 16. Drizzle the towers with some of the prepared salad dressing.
- 17. Let the towers rest at room temperature for about 15 minutes.
- 18. Heat the remaining olive oil in a heavy non-stick pan over medium heat.
- 19. Dip a tablespoon into water to wet it.
- 20. Scoop small portions of the ricotta mixture with the wet spoon.
- 21. Gently place the fritters into the hot oil.
- 22. Press the fritters slightly flat with the back of the spoon.
- 23. Fry the fritters for about two minutes until golden brown.
- 24. Turn the fritters and fry them for another one to two minutes.
- 25. Remove the finished fritters from the pan and place them on the plate.
- 26. Sprinkle the fritters with freshly ground pepper.
- 27. Add a little more grated Parmesan on top if desired.
