🍽️ Ricotta Cabbage Rolls

Ingredients
- 8 Savoy cabbage leaves
- 500 g Ricotta
- 100 g Alpine cheese (grated)
- 600 g Tomatoes
- 50 ml Red wine
- 1 Bay leaf
- 2 Garlic cloves
- 1 tbsp Thyme leaves (chopped)
- 2 tbsp Olive oil
- Sea salt
- Pepper (from the mill)
- 1 pinch Sugar
Instructions
- 1. Thoroughly wash the savoy cabbage leaves under running water.
- 2. Remove the hard central ribs from the leaves.
- 3. Gently flatten the remaining thick parts of the ribs with the flat side of a knife to make the leaves thinner.
- 4. Bring a pot of water and salt to a boil.
- 5. Place the savoy cabbage leaves into the boiling salted water for about 5 minutes.
- 6. Remove the leaves from the water and immediately shock them under cold water to stop the cooking process.
- 7. Let the leaves drain well.
- 8. Peel the garlic cloves.
- 9. Finely chop the garlic.
- 10. Place the chopped garlic into a bowl.
- 11. Add ricotta, grated alpine cheese, fresh thyme leaves, and olive oil to the bowl.
- 12. Mix all filling ingredients thoroughly together.
- 13. Take half a savoy cabbage leaf and place a spoonful of the filling in the center.
- 14. Fold the bottom half of the leaf over the filling.
- 15. Fold the two side ends of the leaf towards the center.
- 16. Roll the leaf tightly from bottom to top into a roll.
- 17. Tie the roll securely with kitchen twine.
- 18. Repeat this with all savoy cabbage leaves and the remaining filling.
- 19. Cut the tomatoes into wedges.
- 20. Place the tomatoes, a bay leaf, salt, pepper, and sugar into a baking dish.
- 21. Pour the red wine over the tomatoes in the dish.
- 22. Place the savoy cabbage rolls on top of the tomatoes.
- 23. Preheat the oven to 180 degrees Celsius for top and bottom heat.
- 24. Place the baking dish into the preheated oven.
- 25. Braise the rolls for about 30 minutes.
- 26. Remove the baking dish from the oven.
- 27. Season the sauce with salt and pepper to taste.
- 28. Remove the kitchen twine from the rolls.
- 29. Serve the rolls hot.
