🍽️ Sweet Rhubarb Soup

Ingredients
- 500 g rhubarb
- 180 g sugar
- 2 tbsp vanilla sugar
- 1 tbsp cornstarch
- Buttermilk (or cream to taste)
Instructions
- 1. Rinse the rhubarb under running water.
- 2. Cut off the tough ends from the stalk.
- 3. Cut the rhubarb into small cubes.
- 4. Put the sugar and vanilla sugar into a pot.
- 5. Pour in about 800 milliliters of water.
- 6. Heat the liquid until the sugar has completely dissolved.
- 7. Add the rhubarb cubes to the pot.
- 8. Let the soup simmer on low heat for about 10 minutes.
- 9. Check if the rhubarb is soft.
- 10. Roughly mash the vegetable with a fork.
- 11. Alternatively, you can use a potato masher.
- 12. Stir the starch into a small amount of cold water.
- 13. Make sure no lumps remain.
- 14. Stir the starch mixture into the soup.
- 15. Bring the soup to a brief boil.
- 16. Remove the pot from the heat.
- 17. Serve the soup warm.
