🍽️ Fruity Rhubarb and Orange Jam

Ingredients
- 800 g rhubarb
- 2 unpeeled oranges
- 0.13 l dry white wine
- 60 ml orange liqueur
- 1 kg jam sugar
Instructions
- 1. Thoroughly wash the rhubarb under running water.
- 2. Peel off the tough outer skin of the rhubarb.
- 3. Cut off the hard ends of the stalks.
- 4. Cut the rhubarb into small, even pieces.
- 5. Finely grate the orange peel before peeling the fruit.
- 6. Peel the oranges completely and remove the white pith.
- 7. Cut the orange flesh into individual segments (fillets).
- 8. Squeeze the juice from the remaining orange pulp.
- 9. Place the orange segments, the squeezed juice, the rhubarb, the orange zest, and the liqueur into a pot.
- 10. Bring the mixture to a boil on the stove.
- 11. Let the jam simmer for about 5 minutes.
- 12. Check if the rhubarb is soft.
- 13. Stir the sugar into the warm mixture.
- 14. Let the jam boil vigorously for approx. 4 minutes.
- 15. Perform a gel test to check the consistency.
- 16. Fill the hot jam into prepared, clean jars.
- 17. Seal the jars tightly.
- 18. Let the jam cool down completely in a cool place.
