🥤 Refreshing Rhubarb-Cherry Smoothie

Ingredients
- 2 stalks rhubarb
- 300 ml apple juice
- 1 apple
- 2 tsp lemon juice
- 1 banana
- 50 g cherries
- 50 g raspberries
- 2 tbsp honey
- 4 ice cubes
Instructions
- 1. Peel the rhubarb and cut it into small pieces.
- 2. Place the rhubarb pieces and 100 milliliters of apple juice into a small pot.
- 3. Cover the pot and simmer the rhubarb on low heat for 10 minutes until soft.
- 4. Allow the rhubarb mixture to cool down.
- 5. Peel the apple, cut it into quarters, and remove the core.
- 6. Roughly chop the apple quarters and drizzle them with lemon juice.
- 7. Peel the banana and slice it.
- 8. Arrange the apple pieces, banana slices, cherries, and raspberries on a flat plate.
- 9. Place the plate in the freezer and freeze the fruits for about 30 minutes.
- 10. Add the frozen fruits, the cooled rhubarb mixture (including the juice), honey, ice cubes, and the remaining apple juice to a blender.
- 11. Blend all ingredients in the blender until smooth.
- 12. Pour the rhubarb drink into glasses.
- 13. Skewer a cherry on a cocktail pick and use it to garnish the drink.
