  1. 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
  2. 2. Wash the rhubarb thoroughly. Remove the tough ends and cut the stalks into pieces about 15 centimeters long.
  3. 3. Place the rhubarb pieces in a baking dish lined with baking paper.
  4. 4. Wash the orange under hot water and pat it dry.
  5. 5. Finely grate the orange peel to release its aromas.
  6. 6. Squeeze the juice out of the orange.
  7. 7. Whisk the orange juice, the orange zest, and the honey together in a small bowl until well combined.
  8. 8. Pour the honey-orange mixture evenly over the rhubarb in the baking dish.
  9. 9. Slice the vanilla pod lengthwise and scrape out the seeds (or add the pod whole).
  10. 10. Add the vanilla to the rhubarb in the baking dish.
  11. 11. Place the dish in the preheated oven and bake the rhubarb for about 15 minutes, until it is soft.
  12. 12. Remove the dish from the oven.
  13. 13. Serve the rhubarb either while still warm or after it has cooled down.
