🍰 Fruity Rhubarb-Strawberry Popsicles

Ingredients
- 150 g rhubarb
- 200 g strawberries
- 100 ml rhubarb juice
- 50 g full cane sugar
- 1 tbsp honey
- 400 g Greek yogurt
- 50 g oat whole wheat cookies
Instructions
- 1. Thoroughly wash the rhubarb.
- 2. Remove the leaves and the tough outer skin.
- 3. Cut the rhubarb flesh into small cubes.
- 4. Wash the strawberries.
- 5. Remove the green stems.
- 6. Halve the strawberries.
- 7. Place the rhubarb and strawberries in a pot.
- 8. Add the juice and the sugar.
- 9. Simmer the mixture over low heat for 5 to 6 minutes.
- 10. Wait until the rhubarb is soft and falling apart.
- 11. Puree the fruit mixture until smooth.
- 12. Strain the puree through a fine sieve.
- 13. Pour the fruit puree into a metal container.
- 14. Place the container in the freezer for about 1 hour.
- 15. Stir the mixture occasionally while freezing.
- 16. Add the honey to the yogurt.
- 17. Stir the yogurt until smooth.
- 18. Alternately fill the fruit puree and yogurt into 8 popsicle molds.
- 19. Insert the wooden sticks into the molds.
- 20. Freeze the popsicles for at least 4 hours.
- 21. Carefully remove the ice from the molds.
- 22. Crush the cookies into fine crumbs.
- 23. Sprinkle the popsicles with the cookie crumbs.
