  1. 1. Thoroughly wash the rhubarb.
  2. 2. Remove the leaves and the tough outer skin.
  3. 3. Cut the rhubarb flesh into small cubes.
  4. 4. Wash the strawberries.
  5. 5. Remove the green stems.
  6. 6. Halve the strawberries.
  7. 7. Place the rhubarb and strawberries in a pot.
  8. 8. Add the juice and the sugar.
  9. 9. Simmer the mixture over low heat for 5 to 6 minutes.
  10. 10. Wait until the rhubarb is soft and falling apart.
  11. 11. Puree the fruit mixture until smooth.
  12. 12. Strain the puree through a fine sieve.
  13. 13. Pour the fruit puree into a metal container.
  14. 14. Place the container in the freezer for about 1 hour.
  15. 15. Stir the mixture occasionally while freezing.
  16. 16. Add the honey to the yogurt.
  17. 17. Stir the yogurt until smooth.
  18. 18. Alternately fill the fruit puree and yogurt into 8 popsicle molds.
  19. 19. Insert the wooden sticks into the molds.
  20. 20. Freeze the popsicles for at least 4 hours.
  21. 21. Carefully remove the ice from the molds.
  22. 22. Crush the cookies into fine crumbs.
  23. 23. Sprinkle the popsicles with the cookie crumbs.
