🍰 Fruity Rhubarb and Strawberry Dessert

Ingredients
- 300 g rhubarb
- 250 g mascarpone
- 1 vanilla pod (pulp)
- 100 g sugar
- 200 ml whipping cream (at least 30% fat content)
- 2 tbsp brown sugar
- 40 ml strawberry lime drink
- 100 g strawberries (with blossoms)
Instructions
- 1. Wash the rhubarb thoroughly.
- 2. Cut off the hard ends.
- 3. Peel off the fibrous strings if necessary.
- 4. Cut the rhubarb into very small cubes.
- 5. Mix the mascarpone with the vanilla seeds and the sugar.
- 6. Whip the cream until stiff.
- 7. Fold in half of the rhubarb cubes into the mascarpone mixture.
- 8. Fold in the whipped cream into the mixture.
- 9. Place the cream in a cool spot.
- 10. Heat two tablespoons of brown sugar with the remaining rhubarb in a pot.
- 11. Stir constantly.
- 12. Deglaze the mixture with strawberry lime drink.
- 13. Let the compote simmer for two to four minutes.
- 14. Transfer the warm mixture into a container.
- 15. Let the compote cool down briefly.
- 16. Wash the strawberries.
- 17. Remove the green stem caps.
- 18. Halve or quarter the strawberries.
- 19. Distribute the cooled rhubarb compote into the serving glasses.
- 20. Top with the mascarpone cream.
- 21. Garnish the dessert with the strawberry pieces.
- 22. Decorate it additionally with edible strawberry flowers.
- 23. Serve the dessert immediately.
