🍰 Gentle Plum Compote with Vanilla Yogurt

Ingredients
- 600 g Renekloden
- 0.5 Bio-Zitrone
- 4 tbsp Honig
- 100 ml Birnensaft
- 2 tsp Speisestärke
- 1 Vanilleschote
- 500 g Joghurt-Alternative aus Soja
- liquid sweetener (to taste)
Instructions
- 1. Rinse the Renekloden (a type of plum) under running water.
- 2. Carefully cut the fruits in half.
- 3. Remove the pits from the plum halves.
- 4. Squeeze the lemon to extract the juice.
- 5. Add two tablespoons of lemon juice to a pot.
- 6. Add the pitted plums, the honey, and the pear juice to the pot.
- 7. Bring the mixture to a boil on the stove.
- 8. Let the compote simmer for five to six minutes.
- 9. Take the cornstarch with a small amount of cold water in a separate bowl.
- 10. Stir the starch until smooth and no lumps remain.
- 11. Add the mixed starch to the hot compote while stirring continuously.
- 12. Let the whole thing boil for one more minute.
- 13. Remove the pot from the heat and let the compote cool down for about ten to fifteen minutes.
- 14. Slice the vanilla pod lengthwise to halve it.
- 15. Scrape out the small vanilla seeds (the pulp) from the pod.
- 16. Mix the vanilla pulp thoroughly with the yogurt.
- 17. Season the yogurt with sweetener if desired.
- 18. Serve the cooled plum compote together with the vanilla yogurt.
