  1. 1. Wash the cucumbers thoroughly.
  2. 2. Cut the cucumbers in half lengthwise.
  3. 3. Scrape out the seeds with a spoon.
  4. 4. Cut the cucumber halves into small cubes.
  5. 5. Peel the shallot.
  6. 6. Finely chop the shallot.
  7. 7. Place the shallot cubes and cucumber cubes in a bowl.
  8. 8. Mix the vegetables with two tablespoons of salt.
  9. 9. Let the mixture sit for one hour to draw out the water.
  10. 10. Drain the vegetables well afterwards.
  11. 11. Rinse the vegetables briefly with water if necessary.
  12. 12. Add the white wine vinegar, about 100 milliliters of water, the lemon juice, and the sugar to a pot.
  13. 13. Bring the liquid to a boil.
  14. 14. Add the drained vegetable cubes.
  15. 15. Bring the mixture to a boil again.
  16. 16. Season the relish with salt and pepper to taste.
  17. 17. Add the thyme sprigs.
  18. 18. Fill the hot relish into prepared, clean jars.
  19. 19. Seal the jars tightly.
  20. 20. Let the relish cool down completely with the lid closed.
