🍽️ Crispy Cucumber Relish

Ingredients
- 2 cucumbers
- 1 shallot
- salt
- 100 ml white wine vinegar
- 1 lemon (juice)
- 50 g sugar
- white pepper
- 3 sprigs thyme
Instructions
- 1. Wash the cucumbers thoroughly.
- 2. Cut the cucumbers in half lengthwise.
- 3. Scrape out the seeds with a spoon.
- 4. Cut the cucumber halves into small cubes.
- 5. Peel the shallot.
- 6. Finely chop the shallot.
- 7. Place the shallot cubes and cucumber cubes in a bowl.
- 8. Mix the vegetables with two tablespoons of salt.
- 9. Let the mixture sit for one hour to draw out the water.
- 10. Drain the vegetables well afterwards.
- 11. Rinse the vegetables briefly with water if necessary.
- 12. Add the white wine vinegar, about 100 milliliters of water, the lemon juice, and the sugar to a pot.
- 13. Bring the liquid to a boil.
- 14. Add the drained vegetable cubes.
- 15. Bring the mixture to a boil again.
- 16. Season the relish with salt and pepper to taste.
- 17. Add the thyme sprigs.
- 18. Fill the hot relish into prepared, clean jars.
- 19. Seal the jars tightly.
- 20. Let the relish cool down completely with the lid closed.
