  1. 1. Peel the onion and cut it into very small cubes.
  2. 2. Wash the cranberries thoroughly and let them drain well.
  3. 3. Add the drained cranberries, the onion cubes, the orange juice, the pecans, the vinegar, the sugar, the cinnamon stick, and the salt to a pot.
  4. 4. Bring the mixture to a boil on the stove.
  5. 5. Let the mixture simmer on medium heat for about 15 minutes.
  6. 6. Stir occasionally until the sauce thickens slightly.
  7. 7. Season the relish to taste with a little more salt and cayenne pepper.
  8. 8. Fill the hot mixture into clean, prepared jars.
  9. 9. Seal the jars tightly and let them cool completely at room temperature.
