🍽️ Fresh Rice and Crab Meat Salad

Ingredients
- 200 g Basmati rice
- 400 g Crab meat
- 2 Tomatoes
- 1 Carrot
- 2 Spring onions
- 1 Garlic clove
- 2 tbsp Sesame seeds (toasted)
- 1 tsp Honey
- 1 Lime (juice)
- 2 tbsp Olive oil
- 1 tbsp Sesame oil
- Sea salt
- Cayenne pepper
- Salad leaves (for serving)
Instructions
- 1. Cook the rice according to the package instructions.
- 2. Let the rice cool down completely.
- 3. Shred the crab meat into small pieces.
- 4. Pour hot water over the tomatoes.
- 5. Shock the tomatoes immediately with cold water.
- 6. Remove the skin from the tomatoes.
- 7. Cut the tomatoes into quarters.
- 8. Remove the seeds from the tomatoes.
- 9. Finely chop the tomatoes.
- 10. Peel the carrot.
- 11. Finely chop the carrot as well.
- 12. Wash the spring onions.
- 13. Remove the tough ends of the spring onions.
- 14. Slice the spring onions into thin rings.
- 15. Peel the garlic.
- 16. Mince the garlic very finely.
- 17. Mix the garlic with honey.
- 18. Add lime juice to the mixture.
- 19. Add the oils.
- 20. Season the dressing mixture with salt.
- 21. Season the dressing mixture with pepper.
- 22. Fold in the crab meat into the dressing.
- 23. Fold in the cooked rice into the dressing.
- 24. Fold in the chopped tomatoes into the dressing.
- 25. Fold in the chopped carrot into the dressing.
- 26. Fold in the spring onion rings into the dressing.
- 27. Taste the salad and adjust seasoning with salt and pepper.
- 28. Place lettuce leaves on a plate.
- 29. Place the rice salad on the lettuce leaves.
- 30. Serve the salad.
