🥗 Crispy Rice Patties with Fresh Tomato Salad

Ingredients
- 200 g long-grain rice
- salt
- 400 g cocktail tomatoes (red and purple)
- 1 red onion
- 60 g black olives
- 4 tbsp olive oil
- pepper (from the mill)
- 3 eggs
- 4 tbsp flour
- 150 g grated parmesan
- 1 pinch sweet paprika powder
- ghee (for frying)
Instructions
- 1. Cook the rice in salted water until it is al dente. Follow the instructions on the package.
- 2. Wash the tomatoes and cut them into quarters.
- 3. Peel the onion and cut it in half.
- 4. Cut the onion halves into thin strips.
- 5. Drain the olives.
- 6. Place the tomatoes, onions, and olives in a bowl.
- 7. Add some olive oil and a pinch of salt.
- 8. Mix everything well together.
- 9. Whisk the eggs with the flour and Parmesan in a separate bowl.
- 10. Add the drained rice to the egg mixture.
- 11. Season the mixture with salt, pepper, and paprika powder.
- 12. Heat ghee (clarified butter) in a frying pan.
- 13. Place a dollop of the rice mixture into the hot pan.
- 14. Fry the patties for about 3 minutes on each side until golden brown.
- 15. Place the finished patties on kitchen paper to absorb excess fat.
- 16. Serve the patties with the tomato salad and a piece of baguette.
