  1. 1. Cook the rice in salted water until it is al dente. Follow the instructions on the package.
  2. 2. Wash the tomatoes and cut them into quarters.
  3. 3. Peel the onion and cut it in half.
  4. 4. Cut the onion halves into thin strips.
  5. 5. Drain the olives.
  6. 6. Place the tomatoes, onions, and olives in a bowl.
  7. 7. Add some olive oil and a pinch of salt.
  8. 8. Mix everything well together.
  9. 9. Whisk the eggs with the flour and Parmesan in a separate bowl.
  10. 10. Add the drained rice to the egg mixture.
  11. 11. Season the mixture with salt, pepper, and paprika powder.
  12. 12. Heat ghee (clarified butter) in a frying pan.
  13. 13. Place a dollop of the rice mixture into the hot pan.
  14. 14. Fry the patties for about 3 minutes on each side until golden brown.
  15. 15. Place the finished patties on kitchen paper to absorb excess fat.
  16. 16. Serve the patties with the tomato salad and a piece of baguette.
