🍰 Classic Rice Pudding

Ingredients
- 200 g Arborio rice
- 500 ml milk
- 3 tbsp sugar
- 1 packet vanilla sugar
- 3 tbsp lemon juice
- 2 tsp grated lemon zest
- 3 tart apples (e.g. Boskop)
- 0.5 tsp cinnamon
Instructions
- 1. Put the rice, milk, lemon zest, 2 tablespoons of sugar, and vanilla sugar into a pot. Bring the mixture to a boil, cover the pot, and let the rice swell on very low heat for about 35 minutes.
- 2. Peel two apples, cut them into quarters, and remove the core. Slice the apple pieces thinly. Mix the slices with lemon juice, 1 tablespoon of sugar, and cinnamon, and let the mixture sit for a short while.
- 3. Layer the rice and apples alternately in small molds or a large bowl. Finish the layering with a layer of rice. Let the pudding cool for 2 to 3 hours until it is firm. Invert the pudding onto a plate for serving and garnish it with the remaining apple wedges.
