  1. 1. Put the rice, milk, lemon zest, 2 tablespoons of sugar, and vanilla sugar into a pot. Bring the mixture to a boil, cover the pot, and let the rice swell on very low heat for about 35 minutes.
  2. 2. Peel two apples, cut them into quarters, and remove the core. Slice the apple pieces thinly. Mix the slices with lemon juice, 1 tablespoon of sugar, and cinnamon, and let the mixture sit for a short while.
  3. 3. Layer the rice and apples alternately in small molds or a large bowl. Finish the layering with a layer of rice. Let the pudding cool for 2 to 3 hours until it is firm. Invert the pudding onto a plate for serving and garnish it with the remaining apple wedges.
