Ingredients
- 8 rice paper
- 8 young carrots (with greens)
- 1 tbsp butter
- salt
- 1 bunch spring onions
- 1 red chili pepper
Instructions
- 1. Place the rice paper sheets between two damp kitchen towels and let them soften there.
- 2. Wash the carrots and brush them clean, but leave a small piece of the green leaf stem attached.
- 3. Clean and wash the spring onions, then cut them into pieces about 12 centimeters long and divide these pieces into thin strips.
- 4. Wash the chili pepper, remove the seeds, and slice it into thin rings.
- 5. Blanch the carrots in salted water for about 7 minutes, then remove them from the water and let them drain.
- 6. Sauté the chili strips in hot butter, add the carrots, and season everything with salt.
- 7. Place two rice paper sheets on top of each other, put the carrots with chili and spring onions in the center, roll everything up tightly, and moisten the edges with water so they stick.
