🍽️ Aromatic Noodle Soup with Squid and Pork

Ingredients
- 100 g small dried squid
- 1 kg lean spare ribs
- 500 g daikon radish
- 1 onion
- 1 tsp black peppercorns
- 2 tbsp pickled radish (ready-made product)
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 400 g pork neck
- 3 tbsp soy sauce
- 1 tsp five-spice powder (Asian grocery)
- 400 g thin round rice noodles (bun)
- 8 peeled, raw large shrimp (approx. 200 g)
- 100 g bean sprouts
- 4 spring onions
- 2 bunches Vietnamese herbs (e.g., cilantro, Thai basil, Vietnamese coriander, long-leafed cilantro...)
- 2 limes
- crispy shallots (fried in oil)
- fish sauce (or chili dip)
Instructions
- 1. Place the squid in lukewarm water for 15 minutes.
- 2. Remove the squid, drain the water, and rinse it thoroughly.
- 3. Cut the spare ribs into individual small pieces.
- 4. Wash the daikon radish and chop it roughly.
- 5. Halve the onion and keep the skin on.
- 6. Put the squid, spare ribs, radish, and onion into a large pot.
- 7. Pour in 4 liters of water.
- 8. Add pepper, pickled radish, fish sauce, and soy sauce.
- 9. Bring the mixture to a boil.
- 10. Let the broth simmer for 2 to 3 hours after boiling.
- 11. Ensure that 2.5 to 3 liters of liquid remain at the end.
- 12. Skim the foam from the surface regularly in between.
- 13. Carefully pour the finished broth through a damp cloth or a fine sieve.
- 14. Discard the cooked meat and vegetables.
- 15. Cut the pork neck meat into strips that are 3 to 4 cm wide and 10 cm long.
- 16. Mix soy sauce with five-spice powder.
- 17. Place the meat in the marinade and let it marinate for at least 30 minutes.
- 18. Place the rice noodles in cold water for 30 minutes.
- 19. Halve the giant prawns lengthwise.
- 20. Remove the vein from the prawns.
- 21. Rinse the prawns briefly if necessary.
- 22. Wash the spring onions and trim the ends.
- 23. Finely chop the spring onions.
- 24. Wash the herbs and remove the thick stems.
- 25. Cut the limes into eighths.
- 26. Place the spring onions, herbs, and limes into small bowls.
- 27. Grill the marinated meat in a non-stick pan or on the grill.
- 28. Grill the meat for 6 to 8 minutes from each side.
- 29. Slice the grilled meat into thin pieces.
- 30. Bring the filtered broth to a boil again.
- 31. Cook the prawns in the hot broth for about 1 minute.
- 32. Cook the soaked rice noodles in plenty of salted water until al dente.
- 33. Follow the package instructions for cooking time, usually 1 to 2 minutes.
- 34. Drain the noodles.
- 35. Distribute the noodles into large, pre-warmed soup bowls.
- 36. Wash the bean sprouts.
- 37. Place bean sprouts, meat slices, and prawns on top of the noodles.
- 38. Pour boiling hot broth over everything.
- 39. Serve the soup immediately.
- 40. Add herbs, lime juice, shallots, shallot oil, fish sauce, or dip to taste.
