🍽️ Rice Noodles with Turkey Breast

Ingredients
- 125 g rice noodles (wide noodles)
- salt
- 3 red bell peppers
- 100 g onions (2 onions)
- 100 g celery
- 100 g turkey breast fillet
- 2 limes
- 2 tbsp rapeseed oil
- 30 g peanuts (unsalted)
- 0.5 tsp sambal oelek
- 2 sprigs basil
- 70 ml classic vegetable broth
- 2 tsp brown cane sugar
Instructions
- 1. Pour the rice noodles into a pot.
- 2. Cover the noodles with boiling, salted water.
- 3. Let the noodles soak according to the package instructions.
- 4. Drain the water.
- 5. Let the noodles drip dry in a colander.
- 6. Cut the bell peppers in half lengthwise.
- 7. Remove the seeds from the bell peppers.
- 8. Rinse the deseeded bell peppers.
- 9. Cut the bell peppers into short strips.
- 10. Peel the onions.
- 11. Halve the peeled onions.
- 12. Cut the onion halves into strips.
- 13. Wash the celery stalks.
- 14. Remove any stringy fibers from the celery stalks if necessary.
- 15. Slice the celery stalks diagonally into thin slices.
- 16. Rinse the turkey breast under running water.
- 17. Pat the turkey breast dry with kitchen paper.
- 18. Slice the turkey breast into thin slices.
- 19. Rinse the limes under hot water.
- 20. Dry one lime with a cloth.
- 21. Finely grate the zest of the dried lime.
- 22. Halve both limes.
- 23. Squeeze the juice from the lime halves.
- 24. Heat one tablespoon of rapeseed oil in a large pan or wok.
- 25. Fry the turkey slices over medium to high heat.
- 26. Stir constantly while doing so.
- 27. Cook the turkey breast for about two minutes.
- 28. Remove the turkey breast from the pan.
- 29. Place the turkey breast on a plate.
- 30. Season the turkey breast with salt.
- 31. Mix the turkey breast with the grated lime zest.
- 32. Finely chop the peanuts.
- 33. Toast the chopped peanuts briefly in the remaining frying fat.
- 34. Remove the peanuts from the pan.
- 35. Add the remaining oil to the pan or wok.
- 36. Heat the oil.
- 37. Add the onion strips to the hot pan.
- 38. Sauté the onions over low heat.
- 39. Stir constantly while doing so.
- 40. Sauté the onions for about two minutes.
- 41. Add the cut celery to the vegetables.
- 42. Add the pepper strips to the vegetables.
- 43. Fry everything while stirring over medium heat.
- 44. Cook the vegetables for about eight minutes.
- 45. Season the vegetables with salt.
- 46. Season the vegetables with Sambal Oelek.
- 47. Wash the basil.
- 48. Shake the basil dry.
- 49. Pluck the basil leaves from the stems.
- 50. Cut the basil leaves into strips.
- 51. Add the rice noodles to the vegetables in the pan.
- 52. Add the turkey breast to the vegetables in the pan.
- 53. Add the peanuts to the vegetables in the pan.
- 54. Add the broth to the vegetables in the pan.
- 55. Heat the mixture in the pan.
- 56. Add lime juice to taste.
- 57. Season the dish with salt.
- 58. Season the dish with brown sugar.
- 59. Fold the basil strips into the dish.
- 60. Serve the dish.
