🍽️ Rice noodles with spinach and tofu

Ingredients
- 200 g rice ribbon noodles
- 500 g spinach
- salt
- 1 bunch cilantro
- 8 spring onions
- 15 g ginger (1 piece)
- 2 garlic cloves
- 1 chili pepper
- 400 g smoked tofu
- 1 tbsp sesame seeds
- 2 tbsp sesame oil
- 3 tbsp soy sauce
Instructions
- 1. Cook the rice noodles according to the instructions on the package.
- 2. Drain the noodles.
- 3. Rinse the noodles with cold water.
- 4. Let the noodles drain well.
- 5. Wash the spinach thoroughly.
- 6. Remove tough stems or wilted leaves from the spinach.
- 7. Bring salted water to a boil.
- 8. Add the spinach to the boiling water for 1 minute.
- 9. Drain the spinach.
- 10. Immediately rinse the spinach with cold water to stop the cooking process.
- 11. Squeeze the spinach firmly to remove excess water.
- 12. Chop the spinach roughly.
- 13. Wash the coriander plant.
- 14. Shake the coriander dry.
- 15. Chop the coriander leaves finely.
- 16. Wash the spring onions.
- 17. Remove the dry tips and roots of the spring onions.
- 18. Slice the spring onions diagonally.
- 19. Peel the ginger.
- 20. Peel the garlic cloves.
- 21. Cut the ginger into small sticks.
- 22. Chop the garlic finely.
- 23. Wash the chili pepper.
- 24. Remove the stem of the chili pepper.
- 25. Chop the chili pepper finely.
- 26. Slice the tofu.
- 27. Roast the sesame seeds in a pan without oil.
- 28. Stir the sesame seeds until they are golden brown.
- 29. Remove the sesame seeds from the pan.
- 30. Place the sesame seeds on a plate.
- 31. Wipe the pan clean.
- 32. Heat 1 tablespoon of oil in the pan.
- 33. Fry the tofu on each side until golden brown over medium heat.
- 34. Deglaze the tofu with 2 tablespoons of soy sauce.
- 35. Remove the tofu from the pan.
- 36. Heat the remaining oil in a second pan.
- 37. Sauté the chili pepper, garlic, and ginger briefly.
- 38. Add the spinach to the pan.
- 39. Add the spring onions to the pan.
- 40. Add the rice noodles to the pan.
- 41. Fry everything for 1 to 2 minutes.
- 42. Season the dish with the remaining soy sauce.
- 43. Distribute the food onto 4 plates.
- 44. Place the tofu slices on top.
- 45. Sprinkle the dish with sesame seeds.
- 46. Sprinkle the dish with coriander.
- 47. Serve the dish.
