🍽️ Quick Rice Noodles with Beef and Broccoli

Ingredients
- 1 tbsp sesame seeds
- 100 g snow peas
- 500 g broccoli
- 20 g ginger (1 piece)

- 250 g rice noodles
- 1 bunch spring onions
- 1 onion
- 150 g beef fillet
- 1 tsp peanut oil
- pepper
- 1 tsp lemon juice
- 1 tsp honey
- 1 tbsp soy sauce
Instructions
- 1. Toast the sesame seeds in a non-stick pan without added fat until they turn golden brown.
- 2. Remove the toasted sesame seeds from the pan and set them aside.
- 3. Thoroughly wash the snow peas and remove the tough strings from the ends.
- 4. Wash the broccoli and divide it into equal, bite-sized florets.
- 5. Peel the ginger root and grate it finely.
- 6. Bring a pot of salted water to a boil.
- 7. Add the snow peas to the boiling water and cook them for about 1 minute.
- 8. Remove the snow peas and immediately rinse them under cold water to stop the cooking process.
- 9. Let the snow peas drain well.
- 10. Add the broccoli to the same boiling salted water and cook it for about 5 minutes.
- 11. Remove the broccoli and immediately rinse it under cold water.
- 12. Let the broccoli drain well as well.
- 13. Cook the rice noodles according to the instructions on the package.
- 14. Drain the noodles and let them drain well.
- 15. Wash the spring onions and remove the dry tips.
- 16. Cut the spring onions into pieces about 2 centimeters long.
- 17. Peel the onion and cut it into thin half rings.
- 18. Cut the beef into strips about 1 centimeter thick.
- 19. Heat oil in a wok or a large frying pan.
- 20. Add the snow peas, broccoli, and spring onions to the hot pan.
- 21. Sauté the vegetables briefly.
- 22. Season the vegetables with salt and pepper.
- 23. Push the sautéed vegetables to the side of the pan.
- 24. Add the beef strips to the center of the pan.
- 25. Fry the meat until golden brown on all sides.
- 26. Push the fried meat to the side of the pan as well.
- 27. Add the sliced onions to the pan.
- 28. Fry the onions lightly until they turn brown.
- 29. Add the grated ginger, lemon juice, honey, and soy sauce.
- 30. Mix all ingredients well together.
- 31. Let the sauce simmer briefly.
- 32. Add the cooked rice noodles to the pan.
- 33. Warm the noodles together with the sauce.
- 34. Mix everything well until the noodles are evenly coated.
- 35. Finally, season the noodles to taste with salt and pepper.
- 36. Sprinkle the finished noodles with the toasted sesame seeds.
- 37. Portion the dish onto four plates.
