  4. 4. Dry the vegetables in a salad spinner.
  5. 5. Cut the pak choi stems into thin strips.
  6. 6. Cut the pak choi leaves into wide strips.
  7. 7. Heat the oil in a medium-sized pot.
  8. 8. Briefly fry the garlic, shallots, and pak choi stems.
  9. 9. Deglaze the mixture with the broth.
  10. 10. Cook the mixture for 5 minutes.
  11. 11. Add the pak choi leaves.
  12. 12. Bring the soup to a boil again.
  13. 13. Season the soup with the fish sauce.
  14. 14. Place the rice noodles in a bowl with lukewarm water.
  15. 15. Soak the noodles for 30 minutes.
  16. 16. Drain the soaking water from the noodles.
  17. 17. Cook the noodles in plenty of water.
  18. 18. Follow the package instructions for cooking time.
  19. 19. Drain the cooked noodles.
  20. 20. Mix the noodles with the pak choi.

  23. 23. Garnish the dish with a lime wedge.
