🍽️ Rice Noodles with Pak Choi

Ingredients
- 250 g round rice noodles
- 500 g Pak Choi
- 2 garlic cloves
- 2 tbsp sesame oil
- 6 shallots
- 600 ml poultry broth
- fish sauce
- 1 lime (juice)
- lime wedge
Instructions
- 1. Peel the garlic and the shallots.
- 2. Chop the vegetables finely.
- 3. Wash the pak choi thoroughly.
- 4. Dry the vegetables in a salad spinner.
- 5. Cut the pak choi stems into thin strips.
- 6. Cut the pak choi leaves into wide strips.
- 7. Heat the oil in a medium-sized pot.
- 8. Briefly fry the garlic, shallots, and pak choi stems.
- 9. Deglaze the mixture with the broth.
- 10. Cook the mixture for 5 minutes.
- 11. Add the pak choi leaves.
- 12. Bring the soup to a boil again.
- 13. Season the soup with the fish sauce.
- 14. Place the rice noodles in a bowl with lukewarm water.
- 15. Soak the noodles for 30 minutes.
- 16. Drain the soaking water from the noodles.
- 17. Cook the noodles in plenty of water.
- 18. Follow the package instructions for cooking time.
- 19. Drain the cooked noodles.
- 20. Mix the noodles with the pak choi.
- 21. Divide the dish onto the plates.
- 22. Drizzle the noodles with lime juice.
- 23. Garnish the dish with a lime wedge.
- 24. Serve the dish immediately.
