🍽️ Wok Rice Noodles with Shrimp, Meat, and Vegetables

Ingredients
- 1 spring onion
- 250 g rice noodles
- 600 ml boiling water
- 250 g pork fillet
- 2 tbsp oil
- 2 garlic cloves
- 200 g shrimp (kitchen-ready)
- 250 g bean sprouts
- 200 g salted peanuts
- 2 eggs
- 2 tbsp lemon juice
- 3 tbsp fish sauce
- 3 tbsp sugar
- 1 tsp green curry paste
Instructions
- 1. Thoroughly wash the spring onions.
- 2. Remove the dry ends of the spring onions.
- 3. Slice the spring onions into thin rings.
- 4. Pour boiling water over the rice noodles.
- 5. Let the noodles soak in the water for 5 minutes.
- 6. Chop the meat into small pieces.
- 7. Peel the garlic cloves.
- 8. Finely chop the garlic.
- 9. Heat the oil in a wok.
- 10. Fry the meat and garlic, stirring occasionally, for about 4 minutes.
- 11. Add the shrimp, sprouts, and half of the peanuts to the wok.
- 12. Fry the ingredients for another 2 minutes.
- 13. Drain the soaked noodles.
- 14. Beat the egg in a separate bowl.
- 15. Add the drained noodles and the beaten egg to the wok.
- 16. Stir everything well until combined.
- 17. Stir in the lemon juice, fish sauce, sugar, and curry paste.
- 18. Sprinkle the finished dish with the spring onion rings and the remaining peanuts.
- 19. Serve the dish immediately.
