  2. 2. Remove the dry ends of the spring onions.
  3. 3. Slice the spring onions into thin rings.
  4. 4. Pour boiling water over the rice noodles.
  5. 5. Let the noodles soak in the water for 5 minutes.
  6. 6. Chop the meat into small pieces.
  7. 7. Peel the garlic cloves.
  8. 8. Finely chop the garlic.
  9. 9. Heat the oil in a wok.
  10. 10. Fry the meat and garlic, stirring occasionally, for about 4 minutes.
  11. 11. Add the shrimp, sprouts, and half of the peanuts to the wok.
  12. 12. Fry the ingredients for another 2 minutes.
  13. 13. Drain the soaked noodles.
  14. 14. Beat the egg in a separate bowl.
  15. 15. Add the drained noodles and the beaten egg to the wok.
  16. 16. Stir everything well until combined.
  17. 17. Stir in the lemon juice, fish sauce, sugar, and curry paste.
  18. 18. Sprinkle the finished dish with the spring onion rings and the remaining peanuts.
  19. 19. Serve the dish immediately.
