🍽️ Fluffy Rice Cakes with Pistachios

Ingredients
- 5 Eggs
- 140 g Sugar
- 1 Pinch Salt
- 100 g Rice Flour
- 40 Ground Pistachios
- 2 tbsp Chopped Pistachios
- 12 Dried Goji Berries (for garnish)
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Place the paper liners into the cups of a muffin tin.
- 3. Separate the eggs by dividing the yolks from the whites.
- 4. Whisk the egg yolks with the sugar until the mixture is frothy.
- 5. Beat the egg whites with a pinch of salt until stiff peaks form.
- 6. Gently fold the beaten egg whites into the egg yolk and sugar mixture.
- 7. Sift the flour over the mixture.
- 8. Add the ground and chopped pistachios.
- 9. Gently stir everything together until you have a smooth batter.
- 10. Fill the batter into the prepared paper liners.
- 11. Bake the cakes in the preheated oven for about 25 minutes.
- 12. Let the cakes cool down briefly in the molds.
- 13. Remove the cakes from the molds.
- 14. Let them cool completely on a wire rack.
- 15. Remove the cakes from the paper liners as desired.
- 16. Arrange the cakes upside down on a serving plate.
- 17. Garnish each cake with a goji berry.
- 18. Serve the cakes.
