  3. 3. Separate the eggs by dividing the yolks from the whites.
  4. 4. Whisk the egg yolks with the sugar until the mixture is frothy.
  5. 5. Beat the egg whites with a pinch of salt until stiff peaks form.
  6. 6. Gently fold the beaten egg whites into the egg yolk and sugar mixture.
  7. 7. Sift the flour over the mixture.
  8. 8. Add the ground and chopped pistachios.
  9. 9. Gently stir everything together until you have a smooth batter.
  10. 10. Fill the batter into the prepared paper liners.
  11. 11. Bake the cakes in the preheated oven for about 25 minutes.
  12. 12. Let the cakes cool down briefly in the molds.
  13. 13. Remove the cakes from the molds.
  14. 14. Let them cool completely on a wire rack.
