🍽️ Creamy Rice and Pumpkin Gratin

Ingredients
- 600 g pumpkin flesh
- 1 small onion
- 2 tbsp ghee
- 100 ml vegetable broth
- 150 g cream cheese
- 2 eggs
- 100 g Gouda
- 300 g cooked basmati rice
- salt
- pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Wash the pumpkin flesh and grate it finely.
- 3. Peel the onion and cut it into small cubes.
- 4. Heat ghee (clarified butter) in a pan.
- 5. Sauté the pumpkin and onions in the ghee.
- 6. Pour in the broth.
- 7. Let the mixture simmer for about 7 minutes.
- 8. Remove the pan from the heat and let the mixture cool down briefly.
- 9. Stir the cream cheese into the cooled pumpkin mixture.
- 10. Add the egg, the cheese, and the rice.
- 11. Mix everything well until a homogeneous mass is formed.
- 12. Distribute the mixture evenly among 4 small ramekins.
- 13. Place the ramekins in the preheated oven.
- 14. Bake the gratins for about 20 minutes.
- 15. Cover the ramekins with aluminum foil if necessary to prevent them from becoming too dark.
- 16. Remove the ramekins from the oven.
- 17. Place the ramekins on plates.
- 18. Serve the dish immediately.
