  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the seeds from the pod with a knife.
  3. 3. Place the vanilla seeds and the empty pod into a pot.
  4. 4. Pour the milk over the vanilla.
  5. 5. Add four tablespoons of raw cane sugar.
  6. 6. Season the mixture with a pinch of salt.
  7. 7. Bring the milk to a boil.
  8. 8. Stir in the rice until it is incorporated.
  9. 9. Reduce the heat to the lowest setting.
  10. 10. Cover the pot with a lid.
  11. 11. Simmer the rice pudding for about 60 minutes on low heat.
  12. 12. Remove the vanilla pod from the pot.
  13. 13. Mix the remaining sugar with cinnamon in a small bowl.
  14. 14. Serve the rice pudding and sprinkle it with the cinnamon-sugar mixture.
