🍽️ Mixed Rice with Shrimp and Feta

Ingredients
- 100 g rice
- 200 g shrimp (peeled and ready for cooking)
- 2 stalks celery
- 2 tbsp black olives (pitted)
- 1 shallot
- 1 clove of garlic
- 2 tbsp olive oil
- 100 ml white wine
- 250 ml fish stock
- 80 g feta
- salt
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the celery stalks.
- 2. Remove the tough fibers and slice the celery into thin rounds.
- 3. Peel the shallot and the garlic clove.
- 4. Dice the shallot and garlic very finely.
- 5. Heat olive oil in a large pan.
- 6. Add the celery, shallot, and garlic to the hot pan.
- 7. Sauté the vegetables briefly until they soften.
- 8. Stir the rice into the vegetables.
- 9. Deglaze the mixture with white wine.
- 10. Pour in the meat or vegetable broth.
- 11. Cover the pan with a lid.
- 12. Simmer the rice on medium heat for about 25 minutes.
- 13. Stir the rice occasionally during the cooking time.
- 14. Add a little more broth if the pan looks too dry.
- 15. Add the shrimp to the pan.
- 16. Cover the pan again.
- 17. Cook the shrimp for about 3 minutes.
- 18. Remove the pan from the heat.
- 19. Fold in the olives.
- 20. Crumble the feta cheese over the top and stir it in.
- 21. Season the dish to taste with salt and pepper.
- 22. Serve the rice hot.
