  1. 1. Thoroughly wash the celery stalks.
  2. 2. Remove the tough fibers and slice the celery into thin rounds.
  3. 3. Peel the shallot and the garlic clove.
  4. 4. Dice the shallot and garlic very finely.
  5. 5. Heat olive oil in a large pan.
  6. 6. Add the celery, shallot, and garlic to the hot pan.
  7. 7. Sauté the vegetables briefly until they soften.
  8. 8. Stir the rice into the vegetables.
  9. 9. Deglaze the mixture with white wine.
  10. 10. Pour in the meat or vegetable broth.
  11. 11. Cover the pan with a lid.
  12. 12. Simmer the rice on medium heat for about 25 minutes.
  13. 13. Stir the rice occasionally during the cooking time.
  14. 14. Add a little more broth if the pan looks too dry.
  15. 15. Add the shrimp to the pan.
  16. 16. Cover the pan again.
  17. 17. Cook the shrimp for about 3 minutes.
  18. 18. Remove the pan from the heat.
  19. 19. Fold in the olives.
  20. 20. Crumble the feta cheese over the top and stir it in.
  21. 21. Season the dish to taste with salt and pepper.
  22. 22. Serve the rice hot.
