🍽️ Shrimp Rice

Ingredients
- 300 g Basmati rice
- salt
- 1 bunch spring onions
- 3 tbsp lemon juice
- zest of half lemons
- pepper (from the mill)
- 3 tbsp olive oil
- 500 g shrimp (ready to cook)
Instructions
- 1. Rinse the rice in a sieve under running water. Then place it in a pot with slightly more than double the amount of lightly salted water. Bring the water to a boil, cover the pot, and let the rice swell on very low heat for about 20 minutes.
- 2. Wash and clean the spring onions. Cut the white part into small cubes and the green part into rings.
- 3. Fry the onion cubes together with the shrimp in a pan in hot oil for 3 to 4 minutes. Then drizzle some lemon juice over them.
- 4. Divide the rice among plates. Place the shrimp on top and serve the dish sprinkled with lemon zest and spring onion rings.
