  1. 1. Rinse the rice in a sieve under running water. Then place it in a pot with slightly more than double the amount of lightly salted water. Bring the water to a boil, cover the pot, and let the rice swell on very low heat for about 20 minutes.
  2. 2. Wash and clean the spring onions. Cut the white part into small cubes and the green part into rings.
  3. 3. Fry the onion cubes together with the shrimp in a pan in hot oil for 3 to 4 minutes. Then drizzle some lemon juice over them.
  4. 4. Divide the rice among plates. Place the shrimp on top and serve the dish sprinkled with lemon zest and spring onion rings.
