🍰 Creamy Rice with Baked Apple

Ingredients
- 4 small apples
- 2 sheets white gelatin
- 2 bags Teekanne green tea (e.g. Sencha Dawn)
- 250 ml water
- 50 g milk rice
- 1 vanilla pod
- 2 tbsp honey
- 20 g pistachios
- 200 ml whipping cream
- to taste lemon balm (for garnish)
Instructions
- 1. Rinse the apples under running water.
- 2. Place the apples in a baking dish.
- 3. Preheat the oven to 200 degrees (180 degrees with fan).
- 4. Bake the apples for 15 to 20 minutes.
- 5. Soak the gelatin in a bowl of cold water for 5 minutes.
- 6. Brew the Sencha Dawn tea with boiling water.
- 7. Remove the tea bag from the liquid.
- 8. Add the rice to the hot tea liquid.
- 9. Cut the vanilla pod lengthwise.
- 10. Scrape out the vanilla seeds with a knife.
- 11. Add the vanilla seeds and the empty pod to the rice.
- 12. Let the rice simmer gently for 10 minutes.
- 13. Remove the pan from the heat and let the rice swell for 25 minutes.
- 14. Squeeze the soaked gelatin sheet with your hands.
- 15. Stir the gelatin into the hot rice until it has dissolved.
- 16. Sweeten the rice to taste with honey.
- 17. Let the rice cream cool down completely.
- 18. Toast the pistachios briefly in a dry pan.
- 19. Whip the cream stiffly with a mixer.
- 20. Remove the vanilla pod from the cooled rice cream.
- 21. Gently fold the stiffly whipped cream into the rice cream.
- 22. Plate the rice pudding.
- 23. Serve with the baked apples.
- 24. Sprinkle the dish with the roasted pistachios.
- 25. Garnish with fresh lemon balm if desired.
