  1. 1. Rinse the apples under running water.
  2. 2. Place the apples in a baking dish.
  3. 3. Preheat the oven to 200 degrees (180 degrees with fan).
  4. 4. Bake the apples for 15 to 20 minutes.
  5. 5. Soak the gelatin in a bowl of cold water for 5 minutes.
  6. 6. Brew the Sencha Dawn tea with boiling water.
  7. 7. Remove the tea bag from the liquid.
  8. 8. Add the rice to the hot tea liquid.
  9. 9. Cut the vanilla pod lengthwise.
  10. 10. Scrape out the vanilla seeds with a knife.
  11. 11. Add the vanilla seeds and the empty pod to the rice.
  12. 12. Let the rice simmer gently for 10 minutes.
  13. 13. Remove the pan from the heat and let the rice swell for 25 minutes.
  14. 14. Squeeze the soaked gelatin sheet with your hands.
  15. 15. Stir the gelatin into the hot rice until it has dissolved.
  16. 16. Sweeten the rice to taste with honey.
  17. 17. Let the rice cream cool down completely.
  18. 18. Toast the pistachios briefly in a dry pan.
  19. 19. Whip the cream stiffly with a mixer.
  20. 20. Remove the vanilla pod from the cooled rice cream.
  21. 21. Gently fold the stiffly whipped cream into the rice cream.
  22. 22. Plate the rice pudding.
  23. 23. Serve with the baked apples.
  24. 24. Sprinkle the dish with the roasted pistachios.
  25. 25. Garnish with fresh lemon balm if desired.
