🍰 Crispy Potato Pancakes with Homemade Applesauce

Ingredients
- 6 ripe apples (e.g. Boskop)
- 2 tbsp cane sugar
- 1 tbsp lemon juice
- 0.5 cinnamon stick
- 2 whole cloves
- 6 tbsp apple juice
- 800 g floury potatoes
- salt
- nutmeg (freshly grated)
- 2 eggs
- 4 tbsp spelt flour
- ghee (for frying)
Instructions
- 1. Wash the apples thoroughly and pat them dry.
- 2. Cut the apples into quarters and remove the core.
- 3. Dice the apple flesh into small cubes.
- 4. Mix the apple cubes with brown sugar, lemon juice, and your chosen spices.
- 5. Place the apple mixture in a pot and bring it to a boil.
- 6. Deglaze the mixture with apple juice.
- 7. Simmer the compote over medium heat for 5 to 7 minutes.
- 8. Remove the pot from the heat and take out the spices.
- 9. Allow the compote to cool down.
- 10. Puree the cooled compote in a blender until smooth.
- 11. Peel the potatoes and wash them.
- 12. Grate the potatoes finely.
- 13. Place the grated potatoes in a clean kitchen towel.
- 14. Squeeze the grated potatoes firmly to remove excess liquid.
- 15. Mix the dry potato shreds with nutmeg, salt, eggs, and spelt flour.
- 16. Heat ghee (clarified butter) in a frying pan.
- 17. Take a tablespoon of potato batter and place it in the hot pan.
- 18. Flatten the batter with the back of the spoon.
- 19. Fry the pancakes on both sides over medium heat for 4 to 5 minutes each until golden brown.
- 20. Remove the finished pancakes from the pan.
- 21. Place them on kitchen paper to absorb excess grease.
- 22. Arrange the warm pancakes on plates.
- 23. Serve the pancakes with the prepared applesauce.
