  1. 1. Wash the apples thoroughly and pat them dry.
  2. 2. Cut the apples into quarters and remove the core.
  3. 3. Dice the apple flesh into small cubes.
  4. 4. Mix the apple cubes with brown sugar, lemon juice, and your chosen spices.
  5. 5. Place the apple mixture in a pot and bring it to a boil.
  6. 6. Deglaze the mixture with apple juice.
  7. 7. Simmer the compote over medium heat for 5 to 7 minutes.
  8. 8. Remove the pot from the heat and take out the spices.
  9. 9. Allow the compote to cool down.
  10. 10. Puree the cooled compote in a blender until smooth.
  11. 11. Peel the potatoes and wash them.
  12. 12. Grate the potatoes finely.
  13. 13. Place the grated potatoes in a clean kitchen towel.
  14. 14. Squeeze the grated potatoes firmly to remove excess liquid.
  15. 15. Mix the dry potato shreds with nutmeg, salt, eggs, and spelt flour.
  16. 16. Heat ghee (clarified butter) in a frying pan.
  17. 17. Take a tablespoon of potato batter and place it in the hot pan.
  18. 18. Flatten the batter with the back of the spoon.
  19. 19. Fry the pancakes on both sides over medium heat for 4 to 5 minutes each until golden brown.
  20. 20. Remove the finished pancakes from the pan.
  21. 21. Place them on kitchen paper to absorb excess grease.
  22. 22. Arrange the warm pancakes on plates.
  23. 23. Serve the pancakes with the prepared applesauce.
