🍰 Crispy Potato Pancakes with Homemade Applesauce and Fresh Herb Quark

Ingredients
- 6 ripe apples (e.g. Boskop)
- 2 tbsp sugar
- 1 tbsp lemon juice
- 0.5 cinnamon stick
- 2 cloves
- 6 tbsp dry white wine
- 300 g low-fat quark
- 150 g sour cream
- 3 tbsp whipping cream
- 4 tbsp mixed, chopped herbs (parsley, chives, chervil, tarragon, mint, etc.)
- salt
- pepper (from the mill)
- lemon juice
- 800 g floury potatoes
- nutmeg (freshly grated)
- 2 eggs
- 4 tbsp flour
- 2 tbsp ghee
Instructions
- 1. Peel the apples and remove the cores.
- 2. Cut the flesh into small cubes.
- 3. Place the apple pieces in a pot.
- 4. Add the sugar, lemon juice, and spices.
- 5. Heat the mixture until it boils.
- 6. Deglaze the mixture with the wine or juice.
- 7. Simmer the compote over medium heat for five to seven minutes.
- 8. Remove the pot from the heat.
- 9. Remove the spices from the mixture.
- 10. Let the applesauce cool down completely.
- 11. Place the quark in a bowl.
- 12. Stir in the sour cream and the cream.
- 13. Mix the mixture with the herbs.
- 14. Season the dip with salt, pepper, and a splash of lemon juice.
- 15. Peel the potatoes and wash them.
- 16. Grate the potatoes finely.
- 17. Place the grated potatoes in a clean kitchen towel.
- 18. Squeeze the liquid out of the towel.
- 19. Catch the drained potato starch in a small container.
- 20. Place the grated potatoes in a large bowl.
- 21. Add nutmeg, salt, eggs, flour, and the reserved starch.
- 22. Mix all ingredients into a dough.
- 23. Heat ghee in a frying pan.
- 24. Take a tablespoon full of dough.
- 25. Place small mounds into the hot pan.
- 26. Press the mounds flat.
- 27. Fry the pancakes until golden brown on both sides.
- 28. Remove the finished pancakes from the pan.
- 29. Place them on a kitchen towel to absorb excess fat.
- 30. Serve the pancakes with the cooled applesauce and herb quark.
