  4. 4. Add the sugar, lemon juice, and spices.
  5. 5. Heat the mixture until it boils.
  6. 6. Deglaze the mixture with the wine or juice.
  7. 7. Simmer the compote over medium heat for five to seven minutes.
  8. 8. Remove the pot from the heat.
  9. 9. Remove the spices from the mixture.
  10. 10. Let the applesauce cool down completely.
  11. 11. Place the quark in a bowl.
  12. 12. Stir in the sour cream and the cream.
  13. 13. Mix the mixture with the herbs.
  14. 14. Season the dip with salt, pepper, and a splash of lemon juice.
  15. 15. Peel the potatoes and wash them.
  16. 16. Grate the potatoes finely.
  17. 17. Place the grated potatoes in a clean kitchen towel.
  18. 18. Squeeze the liquid out of the towel.
  19. 19. Catch the drained potato starch in a small container.
  20. 20. Place the grated potatoes in a large bowl.

  29. 29. Place them on a kitchen towel to absorb excess fat.
  30. 30. Serve the pancakes with the cooled applesauce and herb quark.
