🍕 Colorful Rainbow Pizza

Ingredients
- 150 g frozen spinach leaves (thawed)
- 1 carrot
- 60 g red cabbage leaf
- 1 bell pepper
- 250 g low-fat quark
- 300 g spelt flour Type 1050 (+ 1 tbsp for working)
- 50 ml milk (3.5% fat)
- 50 ml olive oil
- 2 tsp baking powder
- 1 egg
- salt
- pepper
- 1 tbsp dried Italian herbs
- 30 g corn (2 tbsp; can)
- 125 g mozzarella (45% fat in dry matter)
Instructions
- 1. Squeeze the spinach firmly until no more water comes out.
- 2. Peel the carrot and slice it into thin rounds.
- 3. Wash the red cabbage leaves and cut them into fine strips.
- 4. Cut the bell pepper in half.
- 5. Remove the seeds from the bell pepper.
- 6. Slice the bell pepper into fine strips as well.
- 7. Quickly mix 150 grams of quark in a bowl with flour, milk, oil, baking powder, and egg.
- 8. Stir until a dough forms.
- 9. Brush flour onto a rolling pin.
- 10. Line a baking sheet with baking paper.
- 11. Roll the dough on the baking sheet into a large circle.
- 12. Aim for a diameter of about 30 centimeters.
- 13. Spread the remaining quark evenly over the pizza base.
- 14. Season the quark with salt and pepper.
- 15. Sprinkle herbs over the quark.
- 16. Place the spinach in a ring on the outer edge of the base.
- 17. Place the red cabbage in the next ring next to the spinach.
- 18. Place the red bell pepper in the following ring.
- 19. Place the carrots in the next ring.
- 20. Place the corn in the center of the pizza base.
- 21. Drain the mozzarella.
- 22. Slice the mozzarella.
- 23. Place the mozzarella slices on top of the vegetables.
- 24. Preheat the oven to 200 degrees Celsius conventional heat.
- 25. Place the pizza on the lowest rack.
- 26. Bake the pizza for 10 minutes.
- 27. Increase the oven temperature to 180 degrees Celsius fan-assisted.
- 28. Finish baking the pizza for another 10 minutes.
