  1. 1. Core the apple and finely slice it along with the red cabbage and the onion.
  2. 2. Sauté the vegetable mixture in a little oil.
  3. 3. Deglaze the pan with red wine.
  4. 4. Add the spice sachet.
  5. 5. Simmer the mixture for one hour, stirring occasionally.
  6. 6. Remove the spice sachet and season the filling with honey or sugar to taste.
  7. 7. Knead all the ingredients for the ravioli dough into a firm dough.
  8. 8. Let the dough rest in the refrigerator for at least one hour.
  9. 9. Allow the red cabbage to cool down completely.
  10. 10. Process the cooled red cabbage together with the ricotta and parmesan in a blender until you have a fine mixture.
  11. 11. Pass the dough through a pasta machine on the widest setting several times, folding it in between.
  12. 12. Roll the dough into two strips of equal length.
  13. 13. Place small mounds of the red cabbage filling on one of the dough strips.
  14. 14. Lightly brush the dough around the filling with water using a pastry brush.
  15. 15. Place the second dough strip on top and press it down firmly.
  16. 16. Cut out the ravioli around the filling.
  17. 17. Cook the ravioli in boiling water for four to six minutes.
