🍽️ Homemade Ravioli with Sweet and Sour Red Cabbage Filling

Ingredients
- 1 small head red cabbage
- 1 apple
- 1 onion
- oil
- 500 ml red wine
- Spice bag: bay leaf (, cloves, juniper berries, peppercorns, allspice berries)
- sugar (alternatively honey)
- 200 g ricotta
- 100 g parmesan
- 500 g flour
- 5 eggs (size M)
- salt
Instructions
- 1. Core the apple and finely slice it along with the red cabbage and the onion.
- 2. Sauté the vegetable mixture in a little oil.
- 3. Deglaze the pan with red wine.
- 4. Add the spice sachet.
- 5. Simmer the mixture for one hour, stirring occasionally.
- 6. Remove the spice sachet and season the filling with honey or sugar to taste.
- 7. Knead all the ingredients for the ravioli dough into a firm dough.
- 8. Let the dough rest in the refrigerator for at least one hour.
- 9. Allow the red cabbage to cool down completely.
- 10. Process the cooled red cabbage together with the ricotta and parmesan in a blender until you have a fine mixture.
- 11. Pass the dough through a pasta machine on the widest setting several times, folding it in between.
- 12. Roll the dough into two strips of equal length.
- 13. Place small mounds of the red cabbage filling on one of the dough strips.
- 14. Lightly brush the dough around the filling with water using a pastry brush.
- 15. Place the second dough strip on top and press it down firmly.
- 16. Cut out the ravioli around the filling.
- 17. Cook the ravioli in boiling water for four to six minutes.
