🍽️ Homemade Cheese Ravioli with Herb and Pepper Sauce

Ingredients
- 300 g flour
- 2 eggs
- 2 tbsp olive oil
- salt
- 2 tbsp pine nuts (toasted without fat)
- 1 ball mozzarella (diced small)
- 3 tbsp parmesan (freshly grated)
- 3 tbsp basil (finely chopped)
- 1 tsp thyme leaves
- 1 tbsp rosemary needles (chopped)
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- 3 red bell peppers (cleaned, seeded and cut into large pieces)
- 1 clove garlic
- 1 tbsp olive oil
- 1 cup vegetable broth
- salt

Instructions
- 1. Put all ingredients for the herb sauce into a blender and puree until smooth.
- 2. Put flour, eggs, 2 tablespoons of the herb sauce, oil, salt, pepper, and 3 to 4 tablespoons of water into a bowl.
- 3. Knead the ingredients into a smooth pasta dough.
- 4. Shape the dough into a ball.
- 5. Cover the dough ball with a damp cloth and let it rest for 30 minutes.
- 6. Mix the remaining herb sauce with Parmesan, mozzarella, and pine nuts for the filling.
- 7. Dust your work surface with flour.
- 8. Roll out the pasta dough thinly.
- 9. Divide the dough into four equal sheets.
- 10. Place one teaspoon of filling on two dough sheets, spaced about 3 centimeters apart.
- 11. Place the other two dough sheets on top.
- 12. Press the dough firmly around the filling.
- 13. Cut out the ravioli using a pastry wheel.
- 14. Bring plenty of salted water to a boil in a pot.
- 15. Cook the ravioli for about 5 minutes.
- 16. Remove the ravioli and let them drain.
- 17. Heat oil in a pan and sauté the pepper cubes over high heat.
- 18. Press in the garlic and sauté it briefly.
- 19. Deglaze with broth.
- 20. Season with salt and pepper.
- 21. Let the sauce simmer for 5 minutes.
- 22. Remove the pan from the heat.
- 23. Puree the sauce until smooth.
- 24. Serve the ravioli with the pepper sauce.
