  1. 1. Sift the flour onto a clean work surface.
  2. 2. Press a well into the center of the flour with your hand.
  3. 3. Add the eggs and salt into the well.
  4. 4. Lightly beat the eggs with a fork.
  5. 5. Mix the eggs with the surrounding flour.
  6. 6. Add 3 to 4 tablespoons of water.
  7. 7. Work the dough from the center outwards until it is elastic.
  8. 8. Cover the dough with a kitchen towel.
  9. 9. Let the dough rest for 15 minutes.
  10. 10. Chop the roast leftovers in the food processor.
  11. 11. Peel the onion and garlic.
  12. 12. Cut the onion and garlic into small cubes.
  13. 13. Heat the butter in a pan.
  14. 14. Sauté the onion and garlic cubes until translucent.
  15. 15. Mix the sautéed vegetables with the pureed meat.
  16. 16. Stir in the egg yolks, egg, parsley, and Parmesan into the meat mixture.
  17. 17. Season the filling with salt and pepper.
  18. 18. Let the filling rest for at least 30 minutes.
  19. 19. Roll out the pasta dough thinly.
  20. 20. Cut or roll out squares approx. 5 cm in size from the dough.
  21. 21. Place some filling on half of the dough squares.
  22. 22. Leave a border free.
  23. 23. Cover the filled squares with the remaining dough pieces.
  24. 24. Press the ravioli firmly to seal them.
  25. 25. Bring salted water to a boil.
  26. 26. Cook the ravioli in batches for 5 minutes.
  27. 27. Remove the ravioli with a slotted spoon.
  28. 28. Let the ravioli drain well.
  29. 29. Serve the ravioli hot on plates.
