🍽️ Homemade Ravioli with Meat Filling

Ingredients
- 300 g flour
- 1 egg
- 0.5 tsp salt
- 300 g roast meat
- 1 onion
- 1 clove garlic
- 20 g butter
- 2 egg yolks
- 1 egg
- 2 tbsp chopped parsley
- 60 g grated Parmesan
- salt
- pepper (from the mill)
Instructions
- 1. Sift the flour onto a clean work surface.
- 2. Press a well into the center of the flour with your hand.
- 3. Add the eggs and salt into the well.
- 4. Lightly beat the eggs with a fork.
- 5. Mix the eggs with the surrounding flour.
- 6. Add 3 to 4 tablespoons of water.
- 7. Work the dough from the center outwards until it is elastic.
- 8. Cover the dough with a kitchen towel.
- 9. Let the dough rest for 15 minutes.
- 10. Chop the roast leftovers in the food processor.
- 11. Peel the onion and garlic.
- 12. Cut the onion and garlic into small cubes.
- 13. Heat the butter in a pan.
- 14. Sauté the onion and garlic cubes until translucent.
- 15. Mix the sautéed vegetables with the pureed meat.
- 16. Stir in the egg yolks, egg, parsley, and Parmesan into the meat mixture.
- 17. Season the filling with salt and pepper.
- 18. Let the filling rest for at least 30 minutes.
- 19. Roll out the pasta dough thinly.
- 20. Cut or roll out squares approx. 5 cm in size from the dough.
- 21. Place some filling on half of the dough squares.
- 22. Leave a border free.
- 23. Cover the filled squares with the remaining dough pieces.
- 24. Press the ravioli firmly to seal them.
- 25. Bring salted water to a boil.
- 26. Cook the ravioli in batches for 5 minutes.
- 27. Remove the ravioli with a slotted spoon.
- 28. Let the ravioli drain well.
- 29. Serve the ravioli hot on plates.
