Ingredients
- 150 g arugula
- 1 untreated lemon
- 1 tsp honey
- 4 tbsp grape seed oil
- salt
- pepper (from the mill)
- 40 freshly grated parmesan
- 2 tbsp pomegranate seeds
Instructions
- 1. Thoroughly wash the arugula under cold water.
- 2. Dry the greens well or let them drain thoroughly.
- 3. Tear large leaves into bite-sized pieces if necessary.
- 4. Place the prepared arugula into a large bowl.
- 5. Finely grate the lemon peel to release the aromas.
- 6. Squeeze the juice from the lemon.
- 7. Whisk together the lemon juice, lemon zest, honey, and oil in a small bowl.
- 8. Season the dressing mixture with salt and pepper to taste.
- 9. Drizzle the dressing evenly over the arugula.
- 10. Sprinkle grated Parmesan cheese over the salad.
- 11. Garnish the dish with pomegranate seeds as a final touch.
