🍽️ Crispy Vegetable Casserole

Ingredients
- 2 Zucchini
- 2 Eggplants
- 1 red bell pepper
- 1 yellow bell pepper
- 4 Tomatoes
- 1 Onion
- 2 Garlic cloves
- 3 sprigs Thyme
- 4 tbsp Olive oil
- 100 ml dry white wine
- Salt
- Pepper
- 120 g Whole wheat toast (4 slice)
- 60 g Cheese (e.g. Gruyère)
Instructions
- 1. Wash the zucchini and the eggplants thoroughly.
- 2. Remove the hard ends from the zucchini and eggplants.
- 3. Cut the zucchini and eggplants into small cubes.
- 4. Wash the bell peppers.
- 5. Remove the stems and the inside of the bell peppers.
- 6. Cut the bell peppers into small cubes.
- 7. Pour boiling water over the tomatoes.
- 8. Remove the tomatoes from the hot water immediately.
- 9. Peel the skin off the tomatoes.
- 10. Cut the peeled tomatoes into quarters.
- 11. Remove the seeds from the tomato quarters.
- 12. Cut the flesh of the tomatoes into small cubes.
- 13. Peel the onion.
- 14. Peel the garlic clove.
- 15. Finely chop the onion.
- 16. Finely chop the garlic.
- 17. Wash the thyme.
- 18. Dry the thyme.
- 19. Pluck the small thyme leaves from the stems.
- 20. Heat the oil in a pot.
- 21. Fry the eggplant cubes over medium heat.
- 22. Stir occasionally while doing so.
- 23. Fry the eggplants for about two minutes.
- 24. Add the zucchini cubes to the pot.
- 25. Add the pepper cubes to the pot.
- 26. Add the chopped onion to the pot.
- 27. Add the chopped garlic to the pot.
- 28. Add the thyme leaves to the pot.
- 29. Mix all ingredients well together.
- 30. Deglaze the mixture with wine.
- 31. Cover the pot with a lid.
- 32. Let the vegetables simmer for about five minutes.
- 33. Add the tomato cubes to the pan.
- 34. Season the dish with salt.
- 35. Season the dish with pepper.
- 36. Distribute the vegetable mixture onto ovenproof ramekins.
- 37. Remove the hard crust from the toast bread.
- 38. Crumble the toast bread over the vegetables.
- 39. Grate the cheese over the bread crumbs.
- 40. Preheat the oven to 200 degrees Celsius.
- 41. Place the ramekins in the oven.
- 42. Bake the dish for about fifteen minutes.
- 43. Bake it until it is golden brown.
