🍽️ Ratatouille-style Vegetable Stew

Ingredients
- 125 g celery stalks
- 1 zucchini
- 2 bell peppers
- salt
- pepper (from the mill)
- 0.5 bunch spring onions
- 1 tbsp olive oil
- 125 ml strained tomatoes (ready-made product)
- 1 sprig rosemary
Instructions
- 1. Wash the celery thoroughly, remove any tough fibers, and slice the vegetable thinly.
- 2. Wash the zucchini, trim the ends, and cut the vegetable into small cubes.
- 3. Wash the bell pepper, remove the seeds, and cut it into small pieces.
- 4. Place all the prepared vegetables in a large bowl, season with salt and pepper, and mix gently.
- 5. Wash the spring onions, slice them into thin rings, and sauté them in a pan with hot olive oil over medium heat. Then add the pureed tomatoes and let the mixture simmer briefly over low heat.
- 6. Add the tomato-onion mixture to the rest of the vegetables, stir everything well, and let it steep for about an hour to allow the flavors to meld. Garnish the dish with fresh rosemary sprigs at the end.
- 7. Serve the dish warm along with fresh bread.
