  1. 1. Cut the smoked salmon into large chunks and puree it together with the crème fraîche in a blender until smooth. Season the mixture generously with salt and pepper. Lightly grease four small molds with oil and spread half of the salmon mixture evenly into the molds.
  2. 2. Press a small indentation into the center of the salmon mixture with a spoon and place a small spoonful of caviar into each hollow. Cover the caviar with the remaining salmon mixture, smooth the surface, and cover the molds.
  3. 3. Chill the mousse in the refrigerator until firm. Before serving, dip the molds briefly in hot water and turn the mousse out onto plates. Garnish each plate with a fresh dill sprig.
