  1. 1. Place the eggs in a pot with cold water and bring to a boil.
  2. 2. Boil the eggs for 9 minutes.
  3. 3. Remove the eggs from the water and rinse them immediately under cold water to make them easy to peel.
  4. 4. Peel the eggs and chop them finely.
  5. 5. Cover the chopped eggs with cling film and set aside.
  6. 6. Peel the onions and slice them into thin rings.
  7. 7. Squeeze 2 tablespoons of juice from the lemon.
  8. 8. Mix the lemon juice with ricotta, 2 tablespoons of olive oil, salt, and pepper in a bowl.
  9. 9. Wash the arugula and dry it thoroughly.
  10. 10. Finely chop the arugula.
  11. 11. Dust a floured work surface with flour.
  12. 12. Roll out the pizza dough on the floured surface to the size of a baking sheet.
  13. 13. Lightly dust a baking sheet with flour.
  14. 14. Place the rolled-out pizza dough on the baking sheet.
  15. 15. Brush the dough with the remaining olive oil.
  16. 16. Distribute the onion slices evenly over the pizza.
  17. 17. Preheat the oven to 240 °C (220 °C with fan or gas mark 4).
  18. 18. Place the pizza on the lowest rack and bake for 12 minutes.
  19. 19. Remove the pizza from the oven briefly.
  20. 20. Spread the ricotta mixture evenly over the pizza.
  21. 21. Return the pizza to the oven for 2 to 3 minutes.
  22. 22. Remove the finished pizza from the oven.
  23. 23. Distribute the smoked salmon, arugula, and chopped eggs over the pizza.
  24. 24. Season the pizza with coarse pepper.
  25. 25. Cut the pizza into 4 portions.
