🍕 Pizza with Smoked Salmon

Ingredients
- 2 eggs
- 3 red onions
- 1 lemon
- 250 g ricotta
- 4 tbsp olive oil
- salt
- pepper
- 80 g arugula (1 bunch)
- 1 pizza base (for one baking tray)
- flour (for working)
- 200 g smoked salmon (sliced)
Instructions
- 1. Place the eggs in a pot with cold water and bring to a boil.
- 2. Boil the eggs for 9 minutes.
- 3. Remove the eggs from the water and rinse them immediately under cold water to make them easy to peel.
- 4. Peel the eggs and chop them finely.
- 5. Cover the chopped eggs with cling film and set aside.
- 6. Peel the onions and slice them into thin rings.
- 7. Squeeze 2 tablespoons of juice from the lemon.
- 8. Mix the lemon juice with ricotta, 2 tablespoons of olive oil, salt, and pepper in a bowl.
- 9. Wash the arugula and dry it thoroughly.
- 10. Finely chop the arugula.
- 11. Dust a floured work surface with flour.
- 12. Roll out the pizza dough on the floured surface to the size of a baking sheet.
- 13. Lightly dust a baking sheet with flour.
- 14. Place the rolled-out pizza dough on the baking sheet.
- 15. Brush the dough with the remaining olive oil.
- 16. Distribute the onion slices evenly over the pizza.
- 17. Preheat the oven to 240 °C (220 °C with fan or gas mark 4).
- 18. Place the pizza on the lowest rack and bake for 12 minutes.
- 19. Remove the pizza from the oven briefly.
- 20. Spread the ricotta mixture evenly over the pizza.
- 21. Return the pizza to the oven for 2 to 3 minutes.
- 22. Remove the finished pizza from the oven.
- 23. Distribute the smoked salmon, arugula, and chopped eggs over the pizza.
- 24. Season the pizza with coarse pepper.
- 25. Cut the pizza into 4 portions.
