🍽️ Smoked Salmon Cream Bites

Ingredients
- 300 g smoked salmon (in slices)
- 100 g sour cream
- 2 tbsp chive rings
- salt
- pepper (from the mill)
- 1 tsp lemon juice
- 100 ml whipping cream
- 3 sheets gelatin
- 1 bunch dill
Instructions
- 1. Place the smoked salmon slices on a piece of baking paper that has been lightly oiled.
- 2. Cut rectangles measuring 5 x 6 cm from the salmon slices.
- 3. Cut the remaining salmon pieces into small cubes.
- 4. Mix the salmon cubes with the crème fraîche.
- 5. Fold in the chive rolls.
- 6. Season the mixture with salt, pepper, and lemon juice.
- 7. Soak the gelatin in cold water.
- 8. Place the salmon crème fraîche mixture into a bowl.
- 9. Warm the mixture in a hot water bath while stirring constantly until it reaches about 25 degrees Celsius.
- 10. Remove the dripping wet gelatin from the water and place it in a small saucepan.
- 11. Melt the gelatin over moderate heat.
- 12. Stir the melted gelatin into the warmed salmon mixture.
- 13. Whip the cream until stiff.
- 14. Gently fold the whipped cream into the salmon mixture.
- 15. Place the bowl in the refrigerator for about 1 hour.
- 16. Fill the cooled mixture into a piping bag.
- 17. Pipe the cream onto the short side of the salmon slices.
- 18. Roll up the salmon slices with the cream.
- 19. Let the rolls cool in the refrigerator for about 2 hours.
- 20. Slice the rolls diagonally using a sharp, wet knife.
- 21. Garnish the bites with dill and serve.
